Mumma’s Master Sauce
You’ve heard of chef’s having master stock, well, every Mumma needs her master sauce – the sauce that is full a flavour and forms the base of many different meals.
It’s a lifesaver because you can refrigerate in small airtight containers for a few days, or freeze for longer, and all the preparation is done for you.
Hot tip: this sauce has 8 vegetables in it. Packed full of important nutrients, you don’t need to think about how you can encourage your children to eat their vegetables.

There are no real rules with this recipe – you use the vegetables you have, or your family enjoys, and go from there.
The more starchy the vegetables you use (like sweet potato) the thicker your sauce will be.
Vegetables cook down, so what seems like a lot of chopped raw vegetable, seems much less when cooked.
Choose the herbs, spices and flavours that your family enjoys.
If you are finding the sauce too thick as you are cooking, you can add some water, stock or pureed tomatoes to thin it out.
Here’s the recipe for the pictures you see in this article – which has made tonight’s dinner for four, and I have two full jars for a huge head start on two meals this week.
INGREDIENTS:
2 stalks celery chopped
1 small swede, chopped
1/2 medium kohlrabi, chopped
1 onion, chopped
3 cloves garlic, chopped
1 cup broccoli florets, chopped
2 small tomatoes
1 medium zucchini
400mL pureed tomatoes or passata (or filtered water or stock for tomato free)
METHOD:
Saute celery, onion, swede and kohlrabi in a generous splash of extra virgin olive oil (Australian is best).
Add remaining vegetables and tomatoes (or alternative liquid) along with any herbs, spices.
Season with salt and pepper to taste.
Simmer uncovered until vegetables are very tender.
Allow to cool to room temperature before blitzing in a blender or use a hand blender in the pot, for a truly one pot meal.
We served this recipe with spelt pasta and some organic sourdough baked with fresh garlic and butter.
