Green Spiral Chicken Pesto

SO good. SO easy. SO quick. SO nutritious. Having recipes like this to refer to in the busy–ness of family life means there’s less panic, and more quality time with the family.

Ingredients:

1 250g packet buckwheat pasta

2 large or 3 smaller chicken breasts, chopped

1 celery stalk, finely chopped

1 zucchini, chopped

12-15 green beans, chopped

1 cauliflower floret, finely chopped

2 Tablespoons olive oil for frying

200g cashew pesto *

salt and pepper to taste

 

Method:

Place pot of boiling water on to boil. When boiling, add buckwheat pasta and cook 8-9 minutes until cooked. Drain immediately to stop cooking process.

Place oil in frying pan and add chopped chicken when hot. Stir lightly until chicken changes colour.

Add vegetables and pesto, salt and pepper to taste.

Stir occasionally until cooked. Cooking time depends on chopping size of ingredients. We like our vegetables crunchy and the chicken tender, so 2 cm cubed pieces should take no more than 5 minutes.

Toss buckwheat pasta through the pesto and serve. Also yummy served cold the next day 🙂
