Hot Summer Stir Fry
When you’re ready to mix it up from traditional summer salads in the heat, this 5 minute summer stir fry does the trick. Easily adaptable to dietary requirements, suitable for paleo and Mediterranean dietary approaches.
Make this recipe your own by using your favourite vegetables or what you happen to have in the fridge!
Serves 4 | Prep Time: 5 Mins | Cook Time: 5 Mins
Ingredients:
- 1 zucchini, chopped
- 1 carrot, chopped
- 1 head of broccoli, chopped
- 2.5cm piece ginger, grated
- 1-2 grilled chicken breast
- Salt, Pepper
- Tamari Sauce
- Generous handful of leaves like radicchio or arugula
- Good splash of olive or sesame oil
Method:
Heat wok to hot with 2 – 4 tblsp filtered water, and add chopped vegetables. Stir the sizzle for two minutes to blanch vegetables and evaporate some of the water.
Add chopped, grilled chicken and ginger, add tamari and season with salt and pepper.
Add generous handful of radicchio or rocket (arugula) leaves.
Remove from heat and add a good splash of olive oil or sesame oil. Stir through and serve. Yum!! Too easy!!!
